 We have chosen this old southern
tradition for our bread service.
Hoecakes were a staple of the Native
Americans. They taught the early settlers
how to make the batter and cook them on
stones heated in an open fire. The early
settlers took this knowledge and subsituted
metal for stones.
Our Forefathers (and Foremothers)
would leave the fields for a meal carrying
their hoe. They would clean off their hoe
and place it directly in the hot coals of a
fire with the backside up. They would
place cornmeal batter on the hoe and fry
it up golden brown. We don’t use a hoe
but we fry them up golden brown on a hot griddle.We know you will enjoy
these little “hoecakes”. They enriched the settlement of our Great Nation.
